Meet Chef Allan
Chef Allan Aguinaga, a Santa Ana native, discovered his passion for cooking out of necessity—after realizing his mom (sorry, Mom, love you!) wasn’t exactly a culinary expert. Determined to create something better for himself and his family, he began experimenting in the kitchen, unknowingly setting the foundation for his future career.

A transformative trip to Machu Picchu with his sister Sylvia in 2010 inspired him to pursue cooking professionally. He enrolled in the Culinary Art Institute of Orange County, where he graduated at the top of his class in 2012. From there, he honed his skills at renowned establishments like Ralph Brennan’s Jazz Kitchen and Juliette Kitchen before joining True Food Kitchen to deepen his understanding of farm-to-table cuisine.

His journey continued at Farmhouse, where, as Chef de Cuisine, he worked alongside the esteemed Chef Rich Mead to establish the restaurant’s reputation for seasonal, high-quality dining. He then took on leadership roles at Sentinel Restaurant Group under Chef Rainer Schwarz and later served as Corporate Executive Chef at Rodrigo’s Mexican Grill.
With over 17 years of culinary experience, Chef Allan founded AVARYA California Cuisine, blending his diverse expertise with a commitment to work-life balance—creating incredible food while making time for what matters most: his daughters.
